The Beauty of L.A.

There is actually a raw restaurant, that makes raw food to go, right around the corner from my apartment. I like when things get easier. :-) So far, I have tried 5 of their dishes and all have been good. It is great to know I can pick up raw anytime I am feeling lazy, or genuinely too tired, to prepare something on my own.

I think by January I should have this new food thing down....then I will start my training again. For now - the few push-ups, knee squats, lunges, etc, I can get in during the day will have to suffice.

I have also successfully made ice cream with my new blender - no need for an ice cream maker. It is delicious - much less calories than regular ice cream (although not really "light") - and it is Raw and creamy and yummy. It is a perfect alternative to buying ice cream at the store when the sweet tooth calls....plus the raw restaurant has a Raw Apple Torte which is amazing as well....

All this food talk...making me hungry! I look forward to focusing on my training again.

You Get What You Pay For

I tried the celery root and apple soup again, this time with my new blender. What a difference. With the old blender - mush. With the new blender - creamy goodness. Compare the two pictures. I really like this soup too. It is extremely filling - but does make a mess in the kitchen as you have to chop, blend, strain, blend again. It was worth it though. :-)

RAW "Spaghetti"

I got a fancy blender and a fancy spiral slicer - and both turn out to be worth every penny. :-) At least my first impressions are good. I made spaghetti and meatballs for dinner tonight. The spaghetti is actually zucchini and squash, spiraled nicely and with very little effort in my new slicer. The marinara sauce is pretty much the same (tomatoes, basil, bell pepper, olive oil, garlic, etc) - only not cooked. And the meatballs are walnuts, garlic, olive oil, etc chopped and meshed together. That is spaghetti raw - and I like it!

I was surprised at how fast it was to make. I didn't time myself - but it seemed like I was just getting started when the meal was ready. It's weird. It's like you are prepping everything to cook - but instead of cooking it, you eat it. :-) When I get better at it - this meal will probably be faster to make than bringing water to boil to make real pasta. That makes me happy because I envisioned going raw as having to slave over a blender all day long. I am sure some recipes will be involved - but this one was quick and easy.

I still need to learn how to season - or not to season. The flavor is too much. I am use to how things taste cooked. The same food raw has such a different flavor and texture.... And I am full. It almost feels like I ate real pasta. Yeah for raw spaghetti!!

Afterwards, I tried ice cream again (made from dates, almonds, water, agave nectar to sweeten, and a little vanilla). I was hoping I could blend it to get ice cream-ish feel, but this recipe is really for an ice cream maker - which I will probably buy - at some point. :-) My blender is excellent for making green smoothies though - hopefully I will get to make that this weekend.

I am happy I am liking raw food so far. Being full and satisfied after eating vegetables?? Who knew. I suppose the walnuts in the "meatballs" helps with the fullness. But still - I was expecting to have to grab something else after dinner... :-)

Score one for raw.

My First Raw Meal

Well, I created my first raw meal (following a recipe - mostly) - a celery root and apple "soup" mixed with black truffle and olive oils, salt, pepper, lemon juice, and coconut butter. It does taste better than it looks....however...

My blender is horrible! The raw food books said a good blender is key, and now I know they were not lying. My blender couldn't even touch the celery root - I had to juice it first in my juicer, and then try to blend the left over pulp and juice together - and the blender couldn't even handle that! So I ended up using a hand mixer, flinging stuff all over my kitchen, and ending up with mush instead of soup. But oh well, it is still edible...however....

Raw foods have incredible flavor, almost too much. The books said this, but I didn't really believe them on this point either. They said don't add a lot of extra seasoning like you have to with cooked foods. I added extra salt, pepper, coconut butter, and lemon "just in case". Every bite is like a little kick to the tongue!

I am happy though to have found a healthy way to "cook". I will definitely need a better blender....and will have to rethink how I season...but I think this won't be so bad. One raw meal a day for now.

Love,
Terri

Leaving on that midnight train to Georgia....

Well, more like the 6AM flight out of LAX to ATL.... :-) I will be in Atlanta for the Thanksgiving holiday from tomorrow until Sat. Woohoo!

Moz here we come...

Hi Dad,

That property preservation company sounds interesting. What would it do? Help people stay in their homes, or help them to sell?? Sorry you lost your walking buddies, but like you said, the treadmill is good for picking up the pace (and also for adding inclines).

I am excited about climbing Kili with you as well. :-) Glad you want to come to Mozambique too. I really want to do a lot of things - but I think it will come down to how much vacation I can get. And that will be determined on whether the lady I replaced while she is on maternity leaves comes back to work or not. If she does come back, I could probably squeak out 2 1/2 weeks (because some of those days are technically holidays). If she does not come back, I will likely have to fight for the 2 weeks to be able to climb Kilimanjaro....although I am sure my boss would give me at least those two weeks since some of the days are holidays and we are closed anyways. That lady said she would be coming back around Jan or Feb....so I will have to wait and see.

It's an issue because I am alone in my department. So if nobody is there, the work doesn't get done.

I really wanted to do a safari, but I don't think I could get enough vacation no matter what to do that and visit my friends in Mozambique....maybe we can do a one day safari in Mozambique with them at some point. :-) Mozambique is one of the poorest countries in the world...they could probably use the tourist dollars.

Anyways, do you have any special requests? Things you want to see/do?

I will be ready too to climb Kilimanjaro, one way or another! I am going to stick with the gym for now. That is where the skinny people hang out. :-)

Cool pics of the Cuthbert sign and go-cart/ hunting vehicle. :-) Maybe I should start taking random pics of Los Angeles.

I can bring some of the RAW FOOD books home with me on Christmas. It is mostly just recipes. The idea is that cooking kills enzymes, so if you eat mostly raw foods you are getting the most nutrients possible. Plus raw foods are naturally low in calories and/or contain only the healthy fats. So it is just healthier. It is a whole new way of "cooking" though. No need for pots, pans, or an oven. You use a blender, food processor, dehydrator, and a cutting board. None of which I have....well, besides the cutting board. We will see....I am going to start slow, one raw meal a day. :-) I am not sure about websites...but if you google Raw Foods I am sure lots will come out. I started reading some of the theories behind it but it is so simple, people have to use effort to explain it in complicated terms. So I stopped with the theories and am now just looking through the recipes to see what would be practical and yummy.

Have a good one!

Terri

What else do you want to do?

Terri

How many days do you have for this trip? What about the Safari excursion? What else is there to do? If we plan it ahead of time, I can make the time.

I'm walking on the treat mill everyday now. It's not the same as walking with David and Bobby. But it's a better workout because the pace is quicker. I'm trying to get Sissy to walk with me but it's hard because our schedules are so different. I think once a week I will walk outside.

I'm also trying to keep busy and active in the shop at night. Sonny and I are modifying a EZGo Golf Cart for a Hunting Cart for him. This is the first Golf Cart I have done. I put on a lift kit, head/tail lights, carry bed. I got to put new black vinyl on the seats and install a new controller and wiring and it will be done. It's got a Camo paint job. You can learn anything from the Internet. I googled 'camo paint job' and found a guy who posted instruction and photos on how to use pinestraw to get the camo effect paint job. And it worked great!

So by walking everyday, trying to keep busy and watching my weight, I will be ready to take on Mt. Kilimanjaro.

I'm With You!

If you decide to visit friends, I'm with you! If you decide to walk the desert, I'm with you! I just want to be with you! So you plan it and I'm going to be with you!!! Hey. Send me those books on Raw Foodist. Or is there a website or too I could visit.

My walking pals have abandoned me. David living with a lady he meet over the Internet in Albany. He works in Cuthbert so I see him every day but he does not have time to walk. And Bobby is getting married January 1, 2009 in Vegas. He met a girl on Singles.net that he had a crush on as a teenager. They hooked up after all those years, it worked out. They are going to live in her house in Eufaula, Al. That's not too bad because Sissy and I have a camper on Lake Eufaula close to them.

So I'm going to start walking on the treadmill in my shop. I'm getting back on schedule.

Dad unretired. Well, running Carter's was never work anyway. It's just fun. But I want a Beach house in Panama City, Fl, and I need more money. I was thinking about a second Carter's in Dawson. But with the economy I decided to wait. And with all the foreclosures, I decided to start a property preservation company. I have already started doing some work in the surrounding counties around us. I have always loved real estate so this is a good fit for me. And since Sissy loves Carter's and runs it better than I ever could, life is good! Which makes living in Cuthbert, Great!!!!

Kilimanjaro Dates

Hi Dad...

How does Dec 27th thru Jan 7th sound to you? Next year, of course. I think I might be able to get those days off work (it helps having the holidays in between), but I won't know until February or March of next year. That is the 12 day hike. I don't know if I could get the days off for the 13 day hike....(just because of how the dates fall on certain days).

We would fly out on Dec 26th from Atlanta and arrive on Dec 27th. We would then fly back on Jan 7th (arriving Jan 8th), although I am still trying to fit in a couple of days to visit my friends in Mozambique. You are more than welcome to come with me! In that case, we would fly out on Jan 10th or 11th.

What do you think?

Love,
Terri

Terri The Raw Foodist???

Hi Dad....

That is awful about the accident! I am glad you weren't hurt and nobody died. That is always a good thing. Sorry your weekend got ruined though. That is Atlanta traffic for you! It's all these northeners and Californians heading in masses towards the afforable housing - ruins it for everybody!

Well, I am toying with the idea of becoming a raw foodist until Kilimanjaro. I have tried Weight Watchers and other diets, but I hate food journaling and counting, counting, counting just to eat like a normal person. With raw, natural food, I doubt you could ever eat enough to gain weight. I ordered some books on the subject with recipes. I am going to enter into it slowly. Maybe one raw meal a day at first. A true raw foodist eats 90% raw food. Maybe I will be there by Christmas of next year.

I am also going part time in school as of this term....so there will be more time for cardio and strength training. Up until now I have been focusing on strength training because it is easier to fit into my schedule. Fluidity is only 30 minutes, and I do strength training on my breaks at work (lunges, push-ups from a counter top, and squats).

I had been walking on the treadmill at the gym. I like the treadmill because of the incline option. I was up to 6 degree incline. When I walk at the beach, I walk beside the paved area and do intervals - a couple of minutes on sand, then 10 or so minutes on the paved area. But it has been about a month since I walked on the beach. Even though the sand provides resistents, there is no incline....so I still like the treadmill for preparing for Kilimanjaro.

Now that I am part time at school, I will start going to the gym before work since I don't have to worry about going into work early to get more done (I can just stay late now when I need to).

Kilimanjaro seems much more a reality now, especially financially. I should be able to save enough and combine with the bonuses I will receive before then to actually pay cash for the trip.

Sorry again about your bikes and trailer! I saw this huge Harley store yesterday and it made me think of you.

Love,
Terri

PS Hope you don't mind - I changed the template and added some more features to the blog. I was getting tired of the black! I still can't figure out how to center the picture on this new layout. Feel free to change whatever you like. :-)

Atlanta Traffic SUCKS!

Wow! Sissy, Nita, Bobby and I were PUMPED! The whole weekend to ride our bikes in NC. Well, that's until we got to Newnan on I85. Traffic started to slow down on the interstate. We were in the middle lane. Just before we rolled to a stop. A truck with a 3-car hauler trailer rear ended the car behind us. The car slammed into the back of the trailer, and then the truck hit the middle of our trailer. The bikes broke from the tie downs. So in an instant, our truck is damaged, bikes damaged and trailer was a total loss. The axle was broke on the trailer so we removed to tires on that axle and headed straight to the Harley Dealership in Columbus. After borrowing a sledge hammer, we were able to beat the back door open to get the bikes out. Bobby's Dyna Glide was more damaged than my Road King but they can be fixed.

Well, the best thing was none of us was hurt. And the guy in the car only had a broken leg. No one lost their life. So we can Live to ride....Ride to Live another day.

So Bobby and I are looking for another trailer. Maybe a toy hauler. The ladies want bikes so maybe a bigger trailer. It's no hurry since winter is upon us. And we should be able to get a great deal on another trailer this winter.

On tract

I'm on tract. I'm walking every day and losing some weight. I think that's all I need to do. I might start walking with a weighted backpack after losing a lot more weight. I think I need to walk more on the hunt club property behind our house. Walking on paved roads and walking Kilimanjaro will not be the same. Are you walking or riding a bike along the beach path? Walking outside or on the sand? I can't wait to walk Kilimanjaro with you!

We can't wait to see you during the holidays. We will have Christmas at Buck Creek. It will be good to get together again.

We have been busy at Carter's. And that is good. We are taking some time off and we are going to Buck Creek October 17. We have tickets for comedian Ron White, he is performing at Hannah casino. We are going to trailer our bikes and ride to Helen for October fest. My friend Bobby and his girlfriend are going with us. The picture is of our Harley trailer.

For other news, your Dad is going green. I'm processing the used grease from the fryers at Carter's and making diesel for my truck and tractor. I purchased a Kubota, ZD331, which is a zero turn lawn mower to mow my own grass at the house, Carter's and our other properties. It's diesel too. You know me and know I'm not doing this to save the world! It saves a ton of money. It's only cost me about 65 cents per gallon for diesel. Going green for me means money!!!

made goal early :-)

Yeah, I just did Fluidity Intermediate. So new goal is to be on the advanced DVD by Thanksgiving..... :-)

I also had a brainstorm. Since finding time for the gym is so hard, I am going to get some steps to do step aerobics at home. That will be a great workout. And then, I am going to search Craig's List for one of those Boflex step walker things you have....I think that is the perfect exercise to prepare for a hike. I figure maybe in January or February there will be a few up for sale from people who got one for Christmas and didn't like it. :-)

Ok, have to get ready for work. How are you doing Dad?

452 days left.....

Ok, so if we climb on New Year's Eve 2009, then we should be ready by Christmas 2009 (since that is about when we will fly out). I estimate that we have 452 days left to train and get ready, give or take a day or two.

I am still struggling with balancing fulltime work and fulltime school with training, but I have a renewed since of "oh crap, this is going to be here before I know it!". Which is good. 452 days is a good amount of time to prepare.

For my strength training, I am going to continue Fluidity when I can (new goal: be at the intermediate level by Thanksgiving). But also, I have discovered I can get in lunges, knee squats, half push-ups (off of table tops), and arm lifts nicely during work hours. It works out great because I spread the exercises out during the day so I don't get all sweaty, but I still get my strength training in.

As for cardio, I am just going to have to bite the bullet and go to the gym before work. I have started going into work later anyways (by later, I mean 8AM instead of 7AM or 6AM). However I still find myself getting up around 5:30 am or so.....so at least 3 times a week for now I will get up and get to the gym instead of lounging in bed. Then complete a long walk or hike on the weekends....eventually I will slowly up that to 5 days a week, but for right now, I will stick with 3 days + 1 weekend day of cardio. Better than nothing, and it will get me going again....

452 days left.....

Terri

I had a dream last night....

...that we went to climb Mt. Kilimanjaro but were both very unprepared. :-( I forgot my hand warmers and was afraid of the cold. And then we tried to pack all our stuff into one backpack and you wanted to carry it, but it was too heavy and not the proper pack for climbing. Not a very uplifting dream but at least it motivates me more to get ready!

I finished another school term last night (well, technically this morning). Yeah! Now I have a whole week off. And intend to sleep as much as anything, although I will get some more training in....

Have a good week!

new toys are fun :-)

Hi Dad....glad you like your new toy. I would love to set it up for you. :-) I am sure you will have fun though.

I would still like to try for Nov 2009, however Tusker Trails still hasn't posted dates past October 2009. A lot has to do with school too....I am trying to finish by next year. So the later we go in the year, the better.

Today is my first day alone doing gas analysis (and I am already playing on the internet...hehe....in my defense though, the machine is acting up and I am giving it a little time to stabilize :-)). I worked out this morning at the gym, 40 min on the treadmill and 20 min on the bike.

Still don't have the results of my x-ray. I have to do my follow-up appt which I will try and get done this week. They did send a letter saying everything was normal. Uncle Larry (aka Dr. Judy) and my friend who is a nurse said I likely have a pinched nerve, so I am going with that theory for now. My arm does hurt a little after the work out this morning, but not too bad. I knew exercise was bad for you!!!

Ok, I need to check my machine. Have fun with Garmin!

Love,
Terri

Garmin Forerunner 101

Got my new toy in today. A GPS pedometer. Took the day off to read the manual. I wish you were here, I would have you read it for me and tell me how to use it. I brought the simple one, the 101 model. No computer hookup, etc but it still looks complicated. I hope I get it fiqured out. I'll post pictures later on if I can get it to work.

Do we have a date yet? Are we pushing it back? I hope all is well in Hollywood! Dad

PCB was Great!

The Beach was great. Sissy and I would love to get a house on the beach. The market might get right within the year to make it possible. Lucky it's FL Beach and not CA Beaches.

We have been trailering our bikes to Buck Creek and riding. And we still walk every morning. We are going back August 22th to ride Blood Mtn area and to the Cashiers/Highland area. No, mom is not riding with us this weekend.

The good news, I'm still walking every morning but the bad news, I'm not losing weight. So I'm going to start a diet with the walking. I'm going to buy a Pedometer/GPS unit to track my walking every day. I think it would be a fun toy to use.

Panama City Beach?

How was PCB??? I hope you guys had fun!

Training Schedule 7/28 - 8/3

Ok, training schedule for the week:

Monday, 7/28: Gym or beach walk, 1 hr (not completed, went to doctors instead. Nothing serious...just some pain in shoulder I needed checked out and they had a free appointment today last minute. Will have x-rays on Thursday or Friday this week. No reason why I can't continue with cardio...but will skip the Fluidity until source of pain is discovered.)
Tuesday, 7/29: Gym, 1 hr (completed, took it easy but still made it to the gym. 50 min, speed between 3 and 4.5 mph, max HR 159, ave HR 140....I didn't make it to the gym until almost 9:30pm. I figured at least the place would be empty....NOT. Apparently ppl in CA don't sleep, they just exercise all night. The place was packed!)
Wed, 7/30: Gym, 1 hr (not completed....my pain got worse after the work-out yesterday so I am going to cool it with training until my doctor figures out what is wrong with me. I get X-rays done tomorrow and will post what his thoughts on the results...)

You're rocking!

Hi Dad....sounds like you guys are really getting into the training. I agree, the physical training is WAY easier than losing weight. :-( Every pound lost is one less to drag up the mountain. :-) That is what I am going to try and tell myself anyways.....

School started on Monday. So now I have to fit my training into full time work and full time school. It can be done. I am taking a sort-of week and a half break though. I have company coming this weekend...we are going Disneyland, the beach, etc...which is technically a ton of walking and therefore training. :-) Then grandmother and Karen are coming on Monday for 7 days. I know I will have to take those 7 days off from training. However I will try and fit in some strength training in when I can (my personal trainer in Germany gave me tips for fitting in strength training throughout the day...such as doing squats while brushing my teeth).

Action fluidity pics coming soon....

Terri

Time to plan

383 lbs is what I weighted this morning. I'm walking the 2 miles with no effort, and I know the 3.5 miles will be easy. This walk is not flat but it's not Kilimanjaro. There is no doubt I got to lose a lot of weight to make it to the top of kilimanjaro. So I need to work out a plan that I'm walking 7 miles a day and weight 280lbs. This is July 2008, so I should have about 16 months. The hardest part will be losing this weight.

Saturday, June 28, 2008

Up to 2 miles

We have extended the walk. It's about 2 miles now. I don't think I have lost any weight but I sure feel good. I'm going to start weighting each week. I don't want to but I'll post it here each week. We should get to 3.5 miles in about two weeks. And we are walking 7 days a week. We're going to take a break July 19th, we plan to ride the tail of the dragon on our bikes. It's near Robbinsville, North Carolina. It's 318 curves in 11 miles. We will then stay at Buck Creek and ride the mountain areas. Bobby just got a divorce and is dating a 22 year old. He's 51 year old. It will be interesting to see how Sissy and Dorthy, David girlfriend, get along with her. Happy walking and riding!

New Walking Route

The Fluidity looks like a stretching machine or platform? You need to post action shots of you on it. Is there a set routine of exercising moves for it? Strange looking thing? But if it works, that's all that matters. Another bikeriding friend of ours, Bobby, wants to walk with us. We decided to walk from his house, which is about 1 mile from my house on Fountain Bridge Road. And guess what, we now have a real address. We got 911 service in Randolph County so our address is 2908 Fountain Bridge Road. We will still use the P.O. Box in town for now. Back to our walking, our new route is from Bobby's house on District Line Road to Lower Shellman road and back, 1.5 miles. In a couple of weeks, we will extend it to Hwy 82 and back and it will be 3.5 miles. From walking this route, I have noticed the roads are trashy. In the city, the streets are clean. But in the country, people throw anything out of their cars. They sure drink a lot of beer! And they are buying it from Carter's Drive thru!

Tuesday, June 24, 2008

cool :-)

Hi Dad....awesome that you and David started walking.... :-) Here is the Fluidity pic (from their website)...I am still on the beginner's level....trying to get where I do the gym one day, and Fluidity next for 5-6 days in the row....haven't achieved that yet, but I am still trying....can't really report any results. However I do notice it becoming more difficult to raise my heart rate to its previous level (which is actually a sign of increased fitness - darn it!). That just means I have to work harder to achieve the same results....*sigh*....

Walking

June 19, 2008, 715 am. Well, I started walking today. A bikerider friend of mine, David, wanted to start walking before work. It's a 2 mile route. We start at Carter's and walk around downtown. For now, it's Monday thru Friday. It's a start.

You Fell !?!

Hi Dad! You fell off the roof!?! That is awful. At least the padding helps, hehe. Glad you didn't break anything though. :-(

My training was stalled this week too....been shopping instead. (That counts a little bit. :-))....I finally ordered my bed, so this weekend I will be sleeping like a baby.

Fluidity pics coming soon....

Any Fluidity Photos?

A bike sounds like a good ideal. A motorbike would be even better. Do you have any pictures of this Fluidity thing? Fluidity, the name looks like the name of mutual funds Sissy and I owned? How does it work? I fell off the roof and ladder so I'm sore. Roof, ladder, fat man. Not a good combination. So the training is on hold for a few days.

New Toy

LOL. You're a pretty good blogger dad. Maybe you would like bike riding....that is technically sitting. :-) But I know what you mean. I like to relax too (which is a good thing some of the time). Fluidity arrived today. I am so excited. It seems too bulky to put away and take out every time I want to use it...so I will just leave it out. Probably will use it more that way anyways. I am picking up a desk I found on Craig's list tomorrow, and then off to Mary's in Stockton for the weekend...so my new toy will have to wait until Sunday night. Or maybe I will try it right now....no time like the present....

Dad's First Post

Well, saying a few pounds to lose might not be the truth. So let's call that a lie. And as far as training goes, I'm glad you enjoy training, because I hate it. I would rather be sitting in a boat, sitting at our pond, sitting in front of the TV, sitting in a duck blind, sitting on our front porch in Buck Creek. I think you get the sitting point. So I must overcome the weight and training issues. But in my favor, when I have make up my mind to do something, it must be done. I see, hear, and smell Kilimanjaro every waking moment and can't get it out of my head. Like the saying of Yodi in Star Wars movie, TRY NOT, DO or DO NOT! So it's DO!

Kilimanjaro

Some dreams take longer than others.....

It begins with training.........

So far, I have started training at 24 Hour Fitness Club. Who knew I would actually like working out in a gym?? I think every other day at the gym will be enough for now. I like the treadmill and StairClimber. :-) Today I bought something I couldn't afford but really wanted anyways: I bought FLUIDITY. :-) I always wanted a ballet bar (yes, this is true) in my home. I love to stretch...Fluidity is the next best thing (maybe even better, portable). I will use the Fluidity bar for my strength training and stretching for now.

Terri
